Classic Grilled Cheeze with a Twist

This grilled cheeze & tomato sandwich on homemade whole grain bread is every bit as good as the real thing

I make the cheeze a bit differently every time but here’s the basic recipe:

3/4 cup unsalted raw cashews

1/4 cup nutritional yeast

1/4 cup tapioca starch/flour

1/4 peeled lemon

1/4 tsp salt

1 garlic clove

1 cup water

Process all in a high powered blender until smooth; cook over medium heat (stirring constantly) until thick and creamy.

Assemble sandwiches: For the outside of the bread I use homemade SMOKEY MAPLE AIOLI (cashew mayo or sour cream to which a little maple syrup and liquid smoke has been added, which BTW makes a GREAT salad dressing when thinned with a little bit of water). Add tomato and dijon mustard to the sandwich, grill until browned to your liking and voila, classic grilled cheese. It’s been 3+ years since I’ve had grilled cheese… we devoured them!! 😋
