Crab Cake Buddha Bowl

This quick and easy catch-all Buddha bowl was put together using ingredients on hand

Chickpea crab cake* with homemade green tomato tartar*

Steamed broccoli

Rosemary sweet potato medallions

Mildly crunchy zucchini wedges**

Roasted beet & white potato

**Coat wet-from-being-rinsed zucchini wedges In a mixture of vegan panko, nooch, granulated onion, granulated garlic & paprika variety of your choosing, then bake in 400-degree oven for approx 20 min or done to your liking
