Lemon Pesto Pasta

An abundance of needed-to-be-picked basil resulted in this dish…

Pesto ingredients

  • 2 handfuls fresh basil leaves
  • 1/2 lemon, peeled
  • 1/4 cup macadamia nuts
  • 5 garlic cloves
  • 1-2 tbsp nutritional yeast, divided
  • 1/4 cup water, divided
  • Optional spices: red pepper flakes, black pepper

Method

  1. To a food processor add basil, lemon, nuts, garlic, 1 tbsp nooch, 1 tbsp water and process, stopping as needed to scrape sides of bowl
  2. Continue processing, adding additional water 1 tbsp at a time until the pesto comes together. Taste and adjust seasonings, adding final tbsp nooch and any additional spices and seasonings such as more garlic, black pepper, more garlic, dried red pepper flakes, more garlic…😇

For this dish I added 2 cups sliced grape tomatoes, 2 cups white beans and 1 cup peas to 1 box (1 lb) cooked whole grain pasta, tossed it all together with the pesto and voila, dinner is served!
