Chickpea Chickun Salad
- 1.5 cups cooked chickpeas or 1 can, drained
- 1/2 small red or sweet onion, quartered
- 1/4-1/3 cup oil-free plant-based sour cream or mayo (I use homemade cashew based)
- 1/3 cup dried tarragon
- 1/4 tsp black pepper
Add all ingredients to food processor and pulse until desired consistency is achieved. Best served well chilled.
