Kale Café Salad

I’ve never been overly fond of kale but this salad has won me over and then some

Kale Cafe Salad


• 1 Large bunch kale, de-stalked, rinsed & torn

• 1/2 ripe Haas avocado

• 1 tbsp South River Miso Wood Fired Tamari OR 2 tbsp South River Miso Chickpea Miso

• 2 tbsp balsamic condimenti or any slightly reduced balsamic vinegar (I adore Delavignes @ GreatOil.com)

• 2 tbsp apple cider vinegar

• 2 tbsp nutritional yeast

• 1 tsp each granulated onion and garlic

• Optional garnish: grape tomatoes or Campari tomatoes, diced mushroom or your fave veg


1. In a large bowl combine avocado, tamari, vinegars, nooch and spices

2. Add kale to bowl and using gloved hands firmly message kale, squeezing and tossing until until kale is reduced in size by about half

3. Plate and top with optional garnish veg
