I whipped this up without measuring anything…
Ingredients
• Great Northern Beans or white beans of choice
• 1/2 lemon, peeled
• several garlic cloves, peeled
• tahini OR sesame seeds
• white pepper
• black pepper
• Tamari or miso paste
• fresh basil
Method
Add beans & three times as much water to instant pot, press BEAN/CHILI and let it do its thing, NPR (Natural Pressure Release) This will overcook the beans and that’s exactly what you want
While the beans are cooking wrap garlic cloves in parchment paper, then in foil; bake in 375 degree oven for 30 minutes
Later on, drain beans — reserve some of the aquafaba just in case — add the beans to food processor along with remaining ingredients EXCEPT herbs; process until smooth. If it’s thicker than you like add a bit of aquafaba a little at a time, processing between each addition
Stop the machine, add fresh basil + any of your fave fresh herbs you happen to have on hand and PULSE until incorporated, being careful not to over-process and turn the hummus green
