Hearty Minestrone Soup

Hubby deemed this “the kind of soup you could eat every day”


• 1 can diced tomatoes (approx 28 oz)

• 2 carrots, washed and diced

• 2 zucchini, washed and diced

• 1 onion, chopped

• 1 garlic clove, minced

• 1.5 – 2 cups cooked white beans (or 1-2 cans, drained and rinsed)

• 1 cup water

• 1 handful FRESH basil, minced

• 1/4 handful FRESH oregano, minced

• 2” sprig FRESH rosemary


1. Toss everything into a pressure cooker or pot; cover and process 7 minutes on low pressure OR bring to a boil, reduce heat to low simmer, cover and cook until veg is tender

2. Remove rosemary stem, plate and enjoy
