Pinto Bean Stew

  • 2 cups (3/4 lb) dry into beans, rinsed
  • 3 Sweet red pepper
  • 1 Onion
  • 1 Carrot
  • 1 large tomato, diced
  • 1 Garlic clove
  • 1.5 tsp Chili powder
  • 1 tsp Cumin
  • 1.5 tsp Granulated garlic
  • 1.5 tsp Granulated onion
  • Optional garnishes – fresh cilantro, lime juice, hot sauce

…served over jasmine rice or quinoa – optional

  1. To pressure cooker add beans, granulated onion, granulated garlic and enough water to completely cover them 2-inches. Press “bean/chili” and walk away
  2. While beans cook mince/chop/dice garlic, onion, carrot and pepper, set aside
  3. When beans are done, using an immersion blender or blender process until about half of the beans are smooth
  4. Add remaining spices and veg, simmer until veg is tender crisp or done to your liking
